My greatest cooking struggle, aside from the actual cooking, is the ability to cook the correct portion sizes. Typically I cook more than I need, resulting in lovely leftovers. I don't believe in wasting food and food is always better the second day, so getting creative with my extra food was a must!
Have a leftover met? Use it wisely! Here are two semi-healthy recipes that you can alter to work best for you and your left overs!
Turkey Nachos- I made a lasagna (recipe here), and there was left over Mexican Chili that I didn't use (recipe here). Obviously it wasn't going to waste. Nachos it was!
1. Chips
Um, duh! But, you never know who might need this step.
2. Spinach
Or your choice of leafy green. Spinach keeps me quite regular.
3. Mexican Chili
I was worried that naming my chili that was racist, but I see the name already exists. That doesn't necessarily make it not racist, but at least I didn't start it, soooo.....here's the recipe!
4. Shredded Cheese
Again, YOUR choice, but the Mexican cheese mix I used was pretty darn decision. And again, again, NOT racists. Didn't start it.

5. Heat, add guacamole on the side, and ENJOY!

Chicken Taco with Chips and Guacamole- Made my best dish, chicken Alfredo (recipe here), and had some chicken left over. Quesadillas it became!
