It's a Saturday night, around 10:30ish and I was hungry. I didn't want fast food, quick food, or cheap food. I wanted something good, hearty, and somewhat healthy for me. I wanted lasagna.
So I made lasagna for the first time and it was easier than I thought! And if something is easy for me, it's going to be hell on earth for some of you! :) This is going to go quick, so stay with me.
1. Start with your lasagna noodles.
Boil your noodles until they are al dente. Don't let them sit idly for too long or they will get sticky. So I've heard.
2. Add your meat sauce.
I used my Mexican Chili recipe (here) because I wanted it to be spicy, but here are links to more. Sike, you better stay on my blog. Pre-made sauce is a non-meat option, I guess.
3. Spread your ricotta cheese mix (NOT optional) and sprinkle parmesan cheese on top.
Not all lasagna's use ricotta cheese, but I wanted to try it. My mama NEVER would put it in her lasagna, but now that I'm an adult I can cook it how I like. My own little recipe is below.
Ricotta Cheese Spread Recipe

3 spoonfuls of ricotta cheese
1 egg
Chopped bell peppers
Boiled spinach
2 spoonfuls of shredded mozzarella
2 spoonfuls of shredded parmesan
Sprinkle of salt & pepper

Mix together using a handheld blender (or similar tool)
4. Repeat steps 1-3 until you reach the top
The last layer should be your choice of cheese(s) and parsley sprinkled on top. Parsley makes any dish look fancy.
5. Bake lasagna at 350 degrees for 30 -45 minutes.
The internet said that, but I'm not sure. Check your lasagna periodically!
