A Simple Salad Recipe

Don't worry, the salad isn't that simple. My dumb sister thought it was. Just keep reading!

What do you get when you mix a new comer to the kitchen with a lazy cook...#EasyEatingxBLT! My newest interest in life is preparing affordable and easy-to-make meals for myself. Saving money (for more OOTDsxBLT), learning new flavors (cause salt is for the ignorant), and eating healthier options-in 30 minutes or less (because I really don't like being in the kitchen for longer than that and I want a little waist forever).

1. Start with spinach.
It's been my go to leafy green lately. I am not the biggest vegetable fan, AT ALL, but this one never lets me done.

2. Add marinated grilled chicken and melted Mexican cheese.
The chicken I added ended up being GROSS (honestly, truly), but that cheese saved the day. Moral of the story, cheese MATTERS!

3. Top with chopped red and yellow bell peppers.
Just like with spinach, I have been adding bell peppers to just about everything. Ironically, I use to be so afraid to try them because I thought they would be too hot. Ol' pinkish me. Moral of the story: TRY EVERYTHING and DON'T BE A PUNK ALL YOUR LIFE!

4. Optional: Strawberries on top.
For some reason my taste buds were cravings something sweet to counteract with spicy of the peppers, so I went with it. I was skeptical, but it was actually kinda refreshing. Minus the nasty-a$$ chicken.

5. Viola (fancy for, WHOOP DERE IT IS!)
Drizzle with your favorite dressing (for me it was balsamic vinaigrette) and pig out.

I hope you enjoyed this first #EasyEating recipe and please check back for more! If you get a chance to taste it, please let me know!

Peace and peppers, beautiful people!
xo,
BLT
